Just realized parboiling potatoes for 8 minutes before the air fryer gives me crispy fries every time
I was ready to give up on making fries in my air fryer because they always came out pale and sad in the middle. Last Tuesday I tried parboiling the cut potatoes for 8 minutes in salted water, then dried them real good with a towel before they hit the basket at 400 for 18 minutes. The difference was nuts, crispy outside and fluffy inside, no oil needed beyond a quick spray. I do two pounds at a time now and my roommates keep asking me to make them. Has anyone tried adding a little baking soda to the water, or does that mess with the texture?
