My air fryer chicken came out perfect the same week I ruined 3 batches
Last Tuesday I had a rough streak with drumsticks. Two batches came out rubbery and one was burnt on the outside but raw inside. Then on Friday I tried a trick from a YouTube comment, patting them dry and coating with baking powder plus cornstarch. Cooked at 400 for 25 minutes, flipping halfway, and they were crispy like takeout. Has anyone else found a coating mix that works better than plain flour for wings?

Baking powder is one of those kitchen hacks that feels like cheating until you realize it's just science doing the work. It reminds me how often we overcomplicate things, like buying fancy marinades when a simple dry rub does the job. The best fixes usually come from someone's random comment, not from the recipe book.
