Managed to feed my family of four on $62 this past week in Amarillo
So last month I started keeping every grocery receipt in a jar, mostly to see where the money was actually going. Last week I finally sat down with them and totaled everything up, and we did four people for $62 by cooking dried pinto beans twice, using up the last of a pork butt, and making a big pot of chicken and rice on Sunday that stretched to Wednesday lunches. My wife looked at the jar and said we should have done this two years ago. What is your go-to cheap meal when the grocery budget gets tight mid-month?
Did you ever try the whole rotisserie chicken thing at Costco? My buddy does that trick where he buys two of them for ten bucks, pulls all the meat off, and gets like four meals out of it plus makes stock from the bones for soup. He swears it beats cooking from scratch on the busy weeks when nobody has time.
