Why does nobody talk about how versatile lentils are for saving money?

I always skipped lentils in the store, thinking they were too plain. Then I tried a simple lentil soup recipe. Now I use them in multiple dishes every week. My food costs have gone down significantly. I even prefer them over more expensive proteins sometimes.
