I was folding towels in the laundromat on 9th street last Tuesday when this guy told the lady next to him that his family eats rice and beans 5 nights a week and his kids actually cheer when he pulls out the pot. He said the trick is a $1 bag of frozen mixed veggies and a half jar of salsa stirred in at the end, and his whole grocery run for that meal is under $4 for four people. I have been thinking about it all week, so what is your go to cheap meal that your family actually gets excited about instead of just tolerating?
Toss a can of cheap diced tomatoes and some cumin in with the beans and they'll think it's chili night. My kids fight over the crispy rice at the bottom of the pot, so I just let it sit a little longer before stirring.
