Almost tossed a jar of pickled okra my neighbor in Tulsa dropped off, now I buy 6 at a time
My neighbor Deb dropped off a mason jar of pickled okra back in March and it sat in my fridge for 3 weeks because pickled okra sounded like a punishment. Power went out one Sunday and I ate it cold straight from the jar with saltines just to clean out the fridge before stuff spoiled. By Tuesday the jar was empty and I was texting Deb for her brine recipe. She uses dill, garlic, and a pinch of sugar and the crunch holds for months. Anybody else got a weird jar situation that turned into a weekly snack?
Pickled okra sounded like a punishment" is about right until you actually try it. My buddy Rick had the same thing happen with a jar of pickled green tomatoes his aunt canned and left at his place after Thanksgiving. Sat in his pantry for two months, he kept saying he'd toss it, then one night he was out of chips and cracked it open for a snack. Next thing I know he's eating them on everything, eggs, burgers, straight out of the jar. He finally called his aunt for the recipe and now he makes his own batches every summer. Funniest part is he used to make fun of me for liking pickled stuff.
