Honestly, I get where that pitmaster is coming from, but I've always seen it the other way. The real secret is in the prep, not the rest. If your trim is sloppy or your rub is uneven, no amount of resting will fix it. I've seen guys fuss over rest times while serving ribs with silver skin still on. Getting the basics perfect before the meat even hits the heat makes the biggest difference.

Always check the forest service alerts page. Learned it the hard way with a washed out bridge last spring. Drove two hours for a trail that was straight up gone. Now I refresh that page like it's my job before any trip.
