Found a study that says air frying might reduce vitamin B levels in certain veggies - wondering if it matters

I stumbled on a 2023 article from the Journal of Food Science that tested broccoli and spinach in an air fryer at 375 degrees for 12 minutes. They found B vitamin content dropped by about 15 to 20 percent compared to steaming. But other vitamins like A and C actually held up better than in deep frying. So I'm torn - are we losing something important with the quick cook times, or is the tradeoff worth it for the texture and lower fat? What do you all think about the nutritional side of air frying versus other methods? Have any of you seen similar numbers or worried about this before?

Right? I felt so betrayed when I found that out. I've been air frying my broccoli every night thinking I was some health genius, but now I'm wondering if I'm just making expensive steamed sadness. I actually tested it with my own batch once using one of those kitchen scales and a nutrient chart from a website, and my results were pretty close to that 20% number. Now I just eat the broccoli raw half the time and save the air fryer for stuff like frozen fries where I don't really care about the vitamins. It's disappointing because I liked the texture so much better when it was crispy.
