My sister bet me $20 my air fryer wings would be dry and sad, and now I owe her dinner
I always thought air fryer wings were a waste of time and that real wings need hot oil or a long smoke. But last Friday my sister came over for the game and bet me $20 I couldn't get crispy skin without frying them in oil. I dried 2 pounds of wings with paper towels, tossed them in a little baking powder and salt, and cooked them at 380 for 24 minutes, flipping once. The skin cracked when I bit into it and my sister just sat there quiet, which for her is basically a standing ovation. I lost the bet on purpose because I wanted her to admit I was wrong, and she did, out loud, in front of my brother in law. Now I want to know what temp and time people use for drumsticks, since wings and drums are clearly not the same animal.
