Took me 8 months to realize I was crowding the basket every time
I kept making chicken thighs that came out soggy on one side and burnt on the other. Last Tuesday I watched my buddy toss in just 4 pieces and they looked perfect. Turns out I was stuffing 8 or 9 in there, blocking all the air flow. Now I leave a gap between each piece and flip halfway, total game changer. Anyone else have that moment where a recipe suddenly made sense after you saw it done right?

Took me years to figure out why my roasted veggies were always mush on top of burnt, turns out I was basically making a vegetable mosh pit in there. Now I spread them out like they owe me money and suddenly they're actually crispy.
