I used to wash mushrooms and now I just wipe them with a damp paper towel
For about 8 years I ran every pack of button mushrooms straight under the faucet like they were grapes. They always came out soggy in the pan and I figured that was just how mushrooms cooked. Then my sister in law, who worked at a pizza place in Dayton for 4 years, watched me do it at Thanksgiving and said the line cooks there just brush them off with a damp rag and never soak them. I tried it the next week with a $2 pack of baby bellas, wiped them down, sliced them, and they actually browned in the skillet instead of steaming. The difference was real, they got that crispy edge in maybe 5 minutes on medium high instead of turning to mush. I still rinse the really dirty ones quick under cold water and pat them dry right away, but for normal grocery store mushrooms the wipe down thing works fine and I have not gone back. The part that bugs me is I wasted almost a decade of decent stir fries on this. Do you all rinse yours anyway, or is wiping them the normal thing everyone already knew?
Did you notice a difference between the ones you rinse and pat dry versus the ones you wipe, or do they cook up about the same either way? Wiping works for clean packs but I keep wondering if that quick rinse under cold water really soaks in enough to matter. Maybe the key is just getting them dry before they hit the pan, no matter which way you clean them.
