Ugh, Christopher76 is totally right. My last loaf was a brick because I got impatient and cut the fridge time short. The difference is honestly crazy. It's like the dough needs that quiet time to get its act together, and I need to learn to leave it alone. My kitchen failures are basically a tribute to not following that "set and forget" rule. Now I just stare at the fridge knowing good bread is in there, taunting me.
