Finally nailed a flaky pie crust after 11 hockey puck attempts
I kept adding ice water by the tablespoon and wondered why my dough turned to glue every time. Turns out I was overworking it after adding water, so last night I stopped mixing the second it came together, and the crust actually flaked. Anyone else figure out their dough was fine and it was the handling that ruined it?
Oh sure, next you're gonna tell me the secret to pancakes is not beating the batter to death either. Wild how the answer is always just "stop touching it so much.
