Had the weirdest pit day last Saturday where everything just clicked
I fired up my offset at 5am for a pork shoulder and a brisket, and the temp stayed at 225 for 8 hours straight without me messing with the dampers once. Anyone else ever have a day where the smoke gods just smile on you for no reason?

Hold up, I gotta disagree a little. In my experience when things go that smooth it usually means I'm missing something or the meat is gonna stall hard later.
