Just learned from a podcast that Rodney Scott uses a specific vinegar mop on his whole hog that's basically just vinegar, water, and crushed red pepper. No sugar at all in the mop. Blew my mind.

Wait NO SUGAR at all in the mop? That's the part that gets me. I always thought the vinegar sauce HAD to have some sugar to balance it out. The idea of just vinegar and pepper on a whole hog is wild. It must make the pork taste super sharp and spicy. I guess that's the real Carolina style right there. My whole understanding of barbecue just shifted.

Oh man, @lucaslee is right about the bite, but that no-sugar mop is actually pretty common for whole hog east of Raleigh.
