Rant: My old offset smoker finally gave out and I had to pick between a pellet grill or a new stick burner.

I went with the stick burner because I missed the hands-on feel, but the first brisket I cooked on it took 16 hours and I almost fell asleep. Anyone else stick with traditional smokers even when the easier option is right there?

How do you even stay awake that long? I did the same thing last summer and my neighbors probably thought I was nuts, staring at a firebox at 3 AM.

Ever think staring at a fire late at night is kinda the point? I mean, it's quiet and the flames just pull you in. Last winter I'd do that after a long shift, just watching the logs crackle. It's not about staying awake, it's more like your brain finally gets to shut off for a bit.

Last winter I had a fire going every single night for like three months straight. That crackle and glow is the only thing that shuts my brain up after a bad day. Karen's right about the neighbors though, they definitely saw me out there at weird hours and probably wrote me off as a total weirdo. It's a good kind of weird, staring into the coals until your thoughts just stop.
