My pick used to be a full surf and turf spread until I tried a test run on a Tuesday. Cooked everything ahead, kept it warm, and the steak turned to leather while the lobster went rubbery. Now I plan my last plate around stuff that holds up after half an hour on the counter, like a thick stew and fresh bread.
