I thought dried beans were a hassle, then my neighbor Rosa showed me her Sunday pot
I always bought canned beans because I figured dried ones took all day and were not worth the savings, maybe a dollar or two at most. My neighbor Rosa had me over for dinner a few weeks ago and I watched her dump a pound of pinto beans in a pot with water, onion, and some cumin, then just walk away. She said she paid $1.29 for that bag and it made enough for her family of four plus leftovers, while I was paying $1.19 per can and using two cans per meal. The beans soaked overnight and simmered about 90 minutes while she did laundry and watched her shows, and they tasted way better than anything from a can. I tried it myself the next Sunday and my grocery bill dropped about $12 that week just on beans and rice. Now I keep a bag in the pantry at all times. Has anyone figured out a good way to use up the bean broth? I felt bad pouring it out.
