Always thought those fancy Japanese whetstones were overpriced hype for sharpening knives.
Grabbed a Shapton 1000 grit stone on a whim after a bad day with my old oilstone. The edge it puts on my boning knife is so clean and holds so much longer, I feel like an idiot for fighting it. Anyone else have a tool they swore was a gimmick that actually changed their game?
