Had a customer ask for a 'bone-in' ribeye at the shop last week...

I was working the counter at my place in Spokane and a guy came in asking for a bone-in ribeye. I started to explain we usually cut them boneless, but he insisted. So I went back, cut one to order, and he was thrilled. It made me realize I've been pushing the standard cuts without asking what people really want. How often do you all get special requests like that, and do you charge extra for them?

My local hardware store does the same thing with basic lumber sizes. They keep the common stuff up front, but if you ask for an odd cut or a specific grade of plywood, they have it in the back. It’s like a lot of places default to the menu board and forget the real service is in the back room. I always appreciate when they take the extra minute.

Totally get that. It feels like a small victory when they actually check the back instead of just shrugging. Shows they care about helping you finish the project, not just moving product. My place has a guy who remembers what I'm working on and will suggest stuff they keep in the storage shed. Makes all the difference.

That guy remembering your project is the best kind of customer service. My local Ace has a clerk named Dave who does the same with plumbing fittings. It got me wondering, do you think stores train for that kind of personal help anymore, or is it just the luck of finding a good employee who sticks around?
