Wait, you're dry aging ribeye at home? That's pretty brave. I've heard so many horror stories about home setups going wrong. If you're getting weird tastes, something in your fridge environment is probably off. I wouldn't risk it with a good cut of meat like that.

What kind of fridge are you using for this? I had a similar thing happen with a pork chop I tried to age, it picked up this weird soapy taste from my regular fridge. Seeing @stella_morgan78 talk about fridge cleanliness clicked for me, my fridge was just too crowded with other stuff. I scrubbed it down but the smells were stuck in the seals and drawers. I gave up and used a cooler with a fan setup instead, which worked way better. Your ribeye might be soaking up flavors from anything else in there.
