Shoutout to the old-timer who called my rib trim 'wasteful'
He said I was leaving too much meat on the bone cap, and after watching him trim one down in about 30 seconds, I started saving nearly a pound per primal. Anyone else have a specific cut they used to butcher differently?

Actually, I've never wasted any meat because I'm super careful.

Oh man, I wish I had @olivia_allen's discipline. I've definitely hacked up a chicken breast so badly it looked like it lost a fight with a lawnmower. My worst one is probably a pork shoulder. I got impatient and tried to cut it before it was fully rested, and it just shredded into a messy pile. Tasted fine, but it was not a pretty sight on the plate.
