TIL I broke down 41 whole chickens in one shift and my hands quit on me at number 38
Picked up a big catering order last Friday for a wedding in Boise, 41 birds to part out, and I thought no problem since I do this all day. By bird 38 my grip was shot and the last three came out looking like I used a lawn mower on them. Anyone else hit that wall where your hands just stop listening, and what do you do to push through a big order like that?
Grinding through that many birds solo is brutal, and your grip is always the first thing to go. Once my hands start cramping up I switch to a stiffer knife so I'm not fighting the blade, and I take 30 second breaks every 6 or 7 birds to stretch my forearms and shake out my fingers. A tennis ball in my pocket helps too, just squeezing it between batches keeps the blood moving. Also, sharpening halfway through makes a huge difference because a dull blade forces you to squeeze way harder than you should.
