Disagree here. I mean, for chicken or fish, a couple hours might be enough, but for bigger cuts like beef brisket, overnight makes a huge difference. Maybe it's just me, but the flavor gets way deeper when it sits longer. Idk, I've tried both ways and the overnight ones always taste better to me. It's not just about soaking up the flavor, it's about letting the flavors really get in there. Plus, with tougher meats, the extra time helps break things down for a better texture.

Yeah, the flavor gets deeper. But @the_jennifer is right, it's mostly about texture. Overnight lets the meat relax completely. That tough brisket turns soft and almost buttery. A few hours just doesn't do the same thing. It stays a bit tight and chewy.
