Twenty years in and I just learned I've been holding my chef's knife wrong

It took a young line cook pointing it out during a slow shift in Portland last spring. All this time I had my index finger wrapped around the handle, but she showed me the pinch grip on the blade itself. How many other basic habits am I still doing wrong without knowing it?

My buddy Rob had been working the pass at a busy spot in Austin for like six years before he figured out his towel folding was garbage. A stage from somewhere fancy finally clued him in that he was just balling it up instead of doing that neat little triangle tuck into his apron. He said it changed his whole flow because the towel actually stayed put and he wasn't fumbling to grab it every thirty seconds.

Knew a guy who swore by using his knife like a paintbrush for years before someone told him he was holding it wrong too. Funny how the little things slip past even after all that time.
