Visited an old diner kitchen in Buffalo and it hit me how much we've lost

I went to help a friend remodel a 1950s diner in Buffalo last month. The old kitchen still had the original gas range and a big wooden work table that looked like it had seen a hundred thousand pies. I stood there thinking about how every scratch on that table told a story from some cook who came before me. These days we swap out equipment every few years and never get that kind of history built up. Anybody else ever work in a place that felt like it had ghosts of old cooks in the walls?

My friend found a old pie recipe book hidden behind the fridge there once.

I read somewhere that finding old recipe books like that can be a real glimpse into what people cooked back in the day. My grandma had one from the 1940s that called for things like lard and canned evaporated milk in everything. It's funny how some of those old pie recipes are actually coming back around now, people are into the vintage baking trends again.
