A regular at my shop told me my pour over was too fast, and she was right about a 45 second difference

I used to finish my V60 brew in about 2 minutes flat thinking faster meant fresher, but this woman who drinks like 4 cups a day pointed out my water was channeling through the grounds and leaving a weak, sour cup, so I slowed my pour to 2 minutes and 45 seconds with a coarser grind and now the flavor is way more balanced, has anyone else had a total stranger fix their whole routine with one simple observation?
