Honestly, the ketchup thing is a texture hack more than anything. It cuts through the heavy cheese and makes it less gloppy. The pat is right to look at the price, because a cheap, too-thick mac needs it more than a good homemade one. You just need a tiny bit, not a whole pool of it. It's basically just tomato vinegar, which is why it works.
