A guy at the fair in Kalamazoo ripped my corn dog batter apart, said it was "pancake sweet and gummy" and I've been chasing his fix for 3 weekends

Pancake sweet and gummy" sounds like he just wanted a sweeter, thicker batter, not a fix you have to chase at a fair. Probably just more sugar and less liquid in whatever recipe you're using, you don't need that guy lol.
