Question about mixing a new glue for a big tile job

I had a 500 square foot bathroom floor in a new build and used a rapid-set thinset I hadn't tried before, mixing it with a bit less water than the bag said. It set up so fast I barely got half the tiles down before it was like rock. Learned the hard way to follow the mix specs to the letter on a new product. Anyone have a go-to brand for large format tile that gives you more working time?

Honestly, I always tweak the water a little for a thicker mix. Never had a real problem with it setting up too fast.

Yeah, @paul251, that "thicker mix" trick works until you get a batch with a slightly different cement chemistry and it just... doesn't flow right at all.

Ugh, famous last words. Seen that go wrong so many times. Just wait for the wrong bag on a hot day.
