Showerthought: I finally figured out why my homemade pizza crust was always soggy
For years my pizza from the oven came out with a sad, limp middle no matter what recipe I used. I tried preheating my baking sheet in the oven for a full 30 minutes at 500 degrees before sliding the pizza onto it, and it was a total game changer. The crust got crispy and perfect, like a real pizzeria in New Haven. Has anyone else found a simple trick that fixed a food problem you'd given up on?

That preheated pan trick is such a good example of how the smallest step can make the biggest difference... like how letting a steak rest for five minutes after cooking stops all the juice from running out. It's crazy how many kitchen problems come down to just one missing piece of the process.

Totally agree with what claire_walker said about one missing piece. It's like that with so many things. I finally learned to salt my tomatoes early for a salad, not right before serving. That one step pulls out the water so they aren't soggy. The pizza pan trick is the same kind of simple fix. You just have to know the secret step.
