Question about the right way to make a grilled cheese
For years I just slapped butter on the outside of the bread and cooked it in a pan. Then my friend in Chicago showed me her way: she spreads a thin layer of mayonnaise on the outside instead. I tried it last month and the crust gets way crispier and more even. I'm never going back to plain butter. Has anyone else made this switch, or is there a better trick I'm missing?

My buddy Dave in Milwaukee swore by the mayo trick for years. He actually got into a whole argument with his wife about it because she thought it sounded gross. She finally tried it one Sunday when they ran out of butter. Now she makes them that way every single time, even buys a specific brand of mayo just for grilled cheese. Honestly, the crust is unreal.

Honestly, the whole debate makes me miss my grandpa's weird method. He used to fry his grilled cheese in the leftover bacon grease from breakfast. It wasn't healthy AT ALL, but the flavor was just insane.
