Warning: My town's new taco spot uses cucumber salsa and it's a game changer
I kept seeing this at food trucks and pop-ups last summer. Tried it at home with diced cucumber, lime, and cilantro. It adds a fresh crunch that regular salsa doesn't have. Now I skip tomato salsa most days. Just mix it right before serving to keep it crisp.

At a food festival in Austin, I finally gave cucumber salsa a shot after hearing about it for ages.
