Found out that soaking chicken in salt water before air frying makes it juicy, why don't more recipes mention this?

You're right about the salt water soak, that's a brine. Recipes skip it because it adds like 12 extra hours nobody wants to deal with. Most people just want to cook dinner after work, not plan it a day ahead. It also takes up a whole container of space in your fridge. The trade off is amazing flavor and juicy meat against a big time sink. Still, once you try it you realize it's worth the hassle sometimes.

Actually charlieb67, you can soak it for just 30 minutes.

My chicken was so dry last week it could have doubled as a gym chalk substitute, and now I know why. Who actually remembers to start dinner preparations before lunch the same day? The time commitment is the real killer, but even a quick 30-minute soak in salty water makes a huge difference. Is my fridge ever not too full for a giant container of chicken water though?
