My sister said my air fryer wings tasted like a wet sponge, and she was not wrong
My sister came over for the game last month and I did my usual 20 minute wing run in the air fryer at 380, and she flat out told me they tasted like a wet sponge. I was mad at first but she was right, the skin was rubbery and the inside was fine but the outside never crisped. So I tried patting them dry with paper towels first and then leaving them in the fridge on a rack for about 4 hours to dry out. Next batch I did 400 degrees for 12 minutes, flipped em, then 8 more minutes, and the skin actually crackled when I bit into it. My sister came back over Saturday and ate 14 of them without saying one word about sponges. Now I am wondering if the fridge dry step matters as much for drumsticks, has anyone tried that or do you just go straight in?
