Serious question, why does everyone say you can't make real fries in an air fryer?
I used to think that too until I soaked my potatoes for 45 minutes last week. The difference in crispiness was huge, and they didn't turn out soggy like before. What's another trick people get wrong about air fryer basics?

So the soaking tip is huge, I do that too. I mean, @lee72 has a point about the rack, but I still mess up the oil part sometimes. Do you spray yours before or after you put them in the basket? I feel like I get mixed results and idk which way is actually right.

Wait you're spraying them at all? I mean I just toss mine in a bowl with a tiny bit of oil and mix them around before they go on the rack. Spraying after seems like it would just drip right off into the basket. Maybe that's why you're getting mixed results?
