Wow, 500 loaves is a serious commitment. What does your feeding schedule look like to keep it that active for four years? I keep mine in the fridge and sometimes forget about it for weeks. Also, what went wrong with the rye experiment that almost made you quit? I've had starters just go completely flat before.

Ever wonder if forgetting it for weeks actually helps build stronger flavor? My fridge neglect might be the secret to my best loaves. That rye disaster smelled like old gym socks and just wouldn't rise no matter what I did.
