I used to skip resting pie dough... bad idea.
Letting it chill prevents a tough crust.

Learned this the hard way last Thanksgiving. Skipped the chill time because I was in a rush. Spent the next hour trying to roll out a dough that fought back like a sheet of plywood. Had to trash the whole thing and order a sad grocery store pie. Now I treat that fridge time like a law of physics.
