Can we talk about how I used to bake bread without a scale
For years I just used cups and spoons, which meant my sourdough was a total gamble every single weekend. I finally bought a cheap digital scale from the kitchen store after my third flat loaf in a row, and now my crumb is actually consistent. Anyone else make that switch and notice a big difference?

Yeah the "winging it" part really hits, that's exactly what I was doing too, just hoping for the best every time.

Remember my "rustic" loaves from my cup measuring days. I called them rustic, but really they were just sad. One week it'd be a dense brick good for self defense, the next a soupy mess that slumped over the side of the Dutch oven. Switching to a scale felt like someone finally gave me the rulebook for a game I'd been playing blindfolded.

Wait you baked sourdough without a scale? I mean I get it for a regular loaf maybe, but sourdough is so finicky. The idea of just winging the flour and water every time gives me anxiety.
