Phoenix? That's the part that gets me. What does a dry heat desert even know about good bread? My cousin lives there and her bread dries out in like ten minutes. Maybe your friend's taste buds are just permanently parched.

Wait, have you ever had sourdough from a really dry climate? The crust gets this amazing crackle you just can't get with humidity.
