My grandma's tip about room temperature eggs saved my cake
She always said cold eggs will ruin a butter cake and I thought she was just being picky. Last Saturday I made a pound cake and forgot to pull eggs out first. The batter came out lumpy and the cake had a weird dense streak through the middle. Never again, I'll listen to her every time now. Anyone else have a family tip that turned out to be solid gold?

Wait, you had a FULL DENSE STREAK through the middle? That is absolutely terrifying, I never knew cold eggs could do THAT much damage to a cake.

And jesser79, that dense streak isn't just a texture thing, it's like a geological layer of shame right through your cake. I had that happen once with a lemon loaf and my husband asked if I'd accidentally left a brick in the batter. My grandma would have had a field day with that one - she'd hold that cake up like evidence in a courtroom every time I made dessert for the next six months. Now I set my eggs out on the counter the night before, right next to my butter, and pretend I've got it all figured out.
