Shoutout to the person who posted about blind baking with pie weights last week
I tried it on a lemon meringue yesterday and for the first time in 4 years my crust didn't shrink down to nothing, has anyone else had that fix work way better than expected?

Used to be a total sceptic. Thought pie weights were just more kitchen clutter taking up space. Then I tried it after that post. Night and day difference. My crust stayed tall and crispy. Never going back to the fork-prick method again.

I was in the same boat as you, @amy_murphy85. I used to think pie weights were just one more gadget taking up drawer space. But last Thanksgiving I got sick of my crusts shrinking and turning soggy. So I grabbed a bag of dried beans and gave it a shot. That first pie came out perfect, the crust held its shape and stayed flaky all the way through. Now I never blind bake without something weighing it down, it really does make all the difference.
