Hot take: I think Franklin BBQ is overrated and here's why after eating there last month

I waited 4 hours in line at Franklin in Austin last month and honestly the brisket was good but not life-changing. The bark was solid but the inside was just a bit too soft for my taste, like it was almost mushy in spots. Am I the only one who thinks the hype has gotten way bigger than what they actually put on the plate?

My buddy drove from San Antonio just to try Franklin last spring. He got there at 7am, stood in line for hours, finally got his tray, took one bite of the brisket, and then just sat there looking at it for a minute. He told me the texture reminded him of canned chili meat, all soft and broken down with no real chew to it. The best part of his whole day was the free coffee they gave out while waiting, he honestly said that. He spent the whole drive home complaining about how a gas station brisket sandwich in Lockhart hit harder than that four hour wait. So yeah, you are definitely not the only one.

Hard to charge that much when the texture's closer to pot roast than brisket.
