That one week I stretched 20 bucks into 5 solid dinners

Tbh last March I had a rough week where I only had 20 bucks left until payday. I hit up Aldi on Tuesday and grabbed a big bag of rice, a dozen eggs, a whole chicken, and some frozen veggies for 18.47 total. Ended up making chicken and rice soup one night, stir fry another, and even had lunch leftovers for three days. Has anyone else found a go-to cheap grocery combo that just works when cash is tight?

Alright, I gotta gently call out one thing. You said "a whole chicken" for like five meals. Unless that's a tiny chicken, you're probably looking at more like 2-3 dinners depending on how much meat you use. I've done the whole chicken thing a bunch and unless you stretch it way thin with rice and veggies, you're not getting five solid dinners out of one bird. Plus you gotta factor in the eggs, rice, and veggies running out halfway through the week. I'm not saying you're lying, but I think you might be remembering that week with some creative math. Still, solid effort for 20 bucks no doubt.

Man, I gotta respectfully disagree on this one. I've done the whole chicken thing more times than I can count and honestly you can stretch it way more than you think if you're smart about it. Like one breast shredded into a stir fry with rice one night, then thighs with some roasted veggies the next, then the rest picked off for tacos or soup or whatever. I'm not saying you're getting restaurant portions every night but for a regular dinner it's doable if you pace yourself. The key is not eating half the chicken the first night like I used to do, ha.
