My old espresso machine vs my new one - totally different workflow now

I used to pull shots on a beat up Mazzer for like 6 years, just grinding and tamping however felt right. Then I got a new grinder with a doserless setup about 4 months ago, and I had to relearn timing and dose weight completely. The old way was messy but fast, now I'm weighing every shot and it's slowing me down by a minute or two each order. Has anyone else switched grinders and struggled to adjust your morning rush routine?

Oh man, speaking of workflow changes, when I switched from a pressurized basket to a regular one I literally forgot how to pull a shot for like a week. Does your new grinder have clumping issues too? Because mine seems to throw grinds everywhere now, which is crazy since I thought adding a doser would help contain the mess but nope, still finding coffee dust on my scale.

Switching from a doser to doserless is like trading a messy but fast tank for a precise but slow Prius. You'd think less of that grind dust flying everywhere but nah, now I'm just battling clumps and static like some kind of espresso wizard. Our morning rush went from slapping pucks in portafilters to standing there with a little brush and a spray bottle like we're grooming a wild animal. I swear the new setup adds at least 45 seconds per shot of just fiddling around. At least I don't have to knock the doser with a screwdriver anymore to shake loose a gram of stuck grounds.
