Used to guess my milk order by eye, now I log every latte in a $2 notebook
Six months ago I was tossing out about 4 gallons of milk a week at my shop in Echo Park because I never knew how much we actually went through. Every Monday I'd just eyeball the order and hope for the best. Then in January I started writing down every single drink we made, tallies for lattes, caps, flat whites, the works. Turns out we do 31 flat whites on average per day, which I never would have guessed because they feel rare in the moment. Now I order 12 gallons on Tuesdays and 8 on Fridays and we've cut waste to maybe half a gallon a week. Anybody else track their milk or is that just me being extra?
