My cousin bet me $20 I couldn't feed 6 people for under $20 at his place in Reno, and he was wrong
We hit the WinCo on Oddie Boulevard and grabbed two bags of dried pinto beans, a sack of rice, a pack of chicken thighs, and a can of diced tomatoes for $18.40 total. I did beans and rice with shredded thigh meat and a tomato simmer, and everyone went back for seconds including his picky 9 year old. Does anyone have a go to protein that stretches further than thighs when you're feeding a crowd?
Man, pinto beans are already the cheat code and you found that out the hard way. But here's my real question, what cut of chicken did you get for that price, because thighs around here run about $1.99 a pound unless you catch a markdown, and 6 people eating seconds adds up fast. Did you bone them out yourself or just toss whole thighs in the pot and let people pick around the bones? I'm asking because if you went boneless skinless you paid double what you needed to, and a whole chicken or leg quarters would've freed up cash for more rice. Also curious how many pounds of beans you actually cooked, since two bags sounds like way more than one dinner unless you were planning leftovers.
