Hit 200 covers solo last Friday and realized my prep flow was garbage

I had to sub in for a sick line cook and got wrecked during service. My mise en place was all wrong because I kept reaching across myself for stuff. Has anyone else redone their station layout after a brutal shift like that?

Felt that one deep. Nothing like a solo 200 cover shift to show you exactly where your setup is broken. Hopefully you got to sleep in and come back at it fresh.

My first 200 cover solo I had my pans stacked wrong and was grabbing tongs from under a towel. Honestly, a bad shift is just a bad shift. Overthinking your station layout won't save you on a night like that you just gotta push through it.
