My Tuesday double in Little Rock nearly ended my career

I had a 14 hour double shift on the 6th that went bad from the first ticket. The fryer thermostat lied to me all night, and I sent out three plates of raw chicken before I caught it. My sous, Marcus, said I looked like a ghost by 10 PM and took over expo for me. Has anyone else had a service where every single thing goes wrong, and how do you reset for the next day?
