Update: Bought a $300 'smart' sous vide machine for the restaurant
It worked great for a month, then the app crashed during a 72-hour short rib cook. The thing just kept heating and we ended up with rib soup. Has anyone found a reliable brand that doesn't rely on a phone to function?

Oof that's rough but was it really just the app? Those things usually have manual controls too right? Did the machine itself actually fail or did someone just not check on it for three days? Seems like a lot of blame on the gadget for a kitchen that lost a whole batch.

Ugh, I feel that! My own "set it and forget it" plans have definitely backfired on me before.
